Pasta Basta at 8 HaTut Alley in Machane Yehuda Market is the pasta-bar chain's very first branch — fresh pasta tossed in front of you, from a kosher dairy kitchen. The branch opened in summer 2010, and the chain grew from here across the country. You pick a pasta and a sauce — tomato, cream and butter, or olive oil — and add toppings. There is also ravioli, Roman-style pinsa, salads, kids' meals and desserts. The dish named after the place is Linguine Machane Yehuda, with chili peppers and mozzarella balls, and the pasta itself is made for the chain in Emilia-Romagna, Italy. Open Sunday to Thursday from 11:00 into the evening, until midnight on Thursday, and on Friday until the afternoon; closed on Shabbat. Thursday evening is the market's busy night — if you prefer it quiet, come at lunchtime.
