Chef dishes in a pita, with no meat and no fish. Chef Roei Mimoni took five dishes — cauliflower shawarma, beetroot carpaccio, jumbo hummus, aubergine steak and wild rice kebab — and packed each one into a pita. Every savoury dish also comes in a vegan version. In the heart of the market, and always with a queue.
