Mousseline is a boutique ice-cream parlour in Machane Yehuda Market, at 2 HaErmonim Street next to Morduch, making French-style ice cream and fresh-fruit sorbet. The ice cream is made from milk, cream and egg yolks rather than powdered mixes, so it comes out thicker and creamier than Italian gelato. Alongside vanilla, Belgian chocolate and coffee there are less usual flavours — black sesame, matcha, saffron, chai masala and even wasabi — and sorbets such as grapefruit-basil and lemon-mint. Mousseline was founded by Orit Vardi, who left high-tech to study ice-cream and dessert making in France, together with her husband. The first shop opened in 2007, and today there are also branches on HaNasi Street and in Beit HaKerem. Open Sunday to Thursday 11:00–23:00, Friday 07:30–14:30, and on Saturday night from half an hour after Shabbat ends until 23:00. In the evening, when the stalls close and the market fills with bars, Mousseline is still open.
