Khachapuria

Khachapuria is a Georgian bakery at 5 HaShikma Street, on the corner of HaEshkol, in Machane Yehuda Market, baking fresh khachapuri to order under Jerusalem Rabbinate kashrut. It has been in the market since 2009. Tango, the man behind it, makes the dough without margarine from family recipes. The menu covers styles from different regions of Georgia: boat-shaped adjaruli with fried eggs and butter, round megruli with a baked layer of cheese on top, closed imeruli and flaky-pastry penovani — roughly ₪35–56 each. Alongside them come adjika and tkemali sauces, Georgian cheese, Georgian beer and Borjomi water. Open Sunday to Thursday 10:00–17:00 and Friday until 14:00; closed on Shabbat. Every pastry is baked when ordered, so it is worth ordering ahead or allowing for a short wait.
