IWO'S is a burger restaurant at 24 Hillel Street in downtown Jerusalem, open since 2001, with beef ground on site in its own butcher shop — and it opens every day, Shabbat included, until the small hours. The burgers are made from local Israeli beef from pasture-raised calves, ground on site from a mix of sirloin, short rib (asado) and flank. Buns are baked in-house every day, and alongside the burgers there are sandwiches, sides and cheeses from around the world. The idea began when the founder, who trained as a butcher in Munich, started making himself burgers from prime cuts at the butcher's counter. Not kosher. Open Sunday–Wednesday, Friday and Saturday 11:00–03:00, and Thursday until 05:00; business-lunch deals on weekdays. Seating is first come, first served and groups can arrange ahead; delivery covers all of Jerusalem and Mevaseret Zion, and parking is at the Hillel, Music Square or Migdalei Yerushalayim car parks.
